Toum

Ingredients:

1 cup/ 155g peeled garlic cloves

½ cup lemon juice

2 tsp diamond crystal kosher salt (or 1 tsp sea salt)

2 cups neutral oil (I use avocado)

1 tsp egg white or aquafaba

Instructions:
Combine all ingredients in a quart container, and blend until emulsified and smooth.

Notes: The main work here is to make sure you remove the green germ from the center of each clove, which can make it bitter.

I use Christopher Ranch pre-peeled, but you can use fresh cloves.

And we're doing the super-cheater recipe, where we make the whole thing in a quart container and a stick blender. You can also make it in a food processer, or powerful blender.
